Virgin coconut oil is obtained from fresh coconut milk, coconut meat or residue of the coconut (Cocos nucifera L.). Virgin coconut oil is rapidly gaining in popularity throughout the world, in comparison to ordinary coconut oil, as the virgin oil is extracted by a mechanical process without subjecting it into any chemical changes. This allows the oil to remain in its most natural form, retaining the fragrance and flavor of coconut, as well as its high content of vitamin-E, minerals and healthy medium-chain fatty acids. As a result, virgin coconut oil contains almost no trans-fatty acids. The presence of high amounts of lauric acids are especially valued. Virgin coconut oil has about 50% lauric acids, which have been associated with enhanced immunity. Virgin coconut oil is suitable for human consumption in its natural state.

Coconut flour is growing in popularity as more people discover the many health benefits of coconut flour nutrition, in addition to its many uses as a delicious, gluten-free, and healthy alternative to other flours. Coconut flour is made from ground and dried coconut meat. Coconut flour is high in fiber, protein, and healthy fats and is free from wheat and other grains. It is also low in sugar, digestible carbohydrates and calories, and has a low score on the glycemic index.
The Cerrado is similar to African and Australian savannas but has greater biodiversity and an ancient biome of plant species. Among its numerous tree species is the Baru (Dipterys alata Vox), a woody, leguminous, large tree with fruit that matures in September and October, and contains a delicate-tasting almond called the Castanha de Baru (Baru Nut). The Baru nut can be toasted, acquiring a taste similar to peanuts or cashews. The oil extracted from the Baru nut is used to flavor local dishes or as a treatment for rheumatism. The nut has a high nutritional value and is rich in protein.
